Our Company has one exciting mission: To Entertain the human race. POSITION SUMMARY: Coordinates production, finishing, and distribution of all desserts and bakery items. Supervises all production and staff on their shift. Maintain quality and quantity of all baked goods and pastry items in all restaurants and outlets. ESSENTIAL FUNCTIONS AND TASKS: - Performs all functions of other positions in the pastry shop including pastry helpers, bakers, lead bakers, and head bakers. - Oversees product quality and make necessary modifications. - Monitors production to maximize quality and minimize waste. - Ensures proper rotation (FIFO) and see that leftovers are utilized. - Assists with training of new employees. - Assists with various clerical duties regarding staff and kitchen operations, i.e., payroll and staff files, etc. - Utilizes proper food handling techniques following health and safety standards. - Maintains a clean and organized work area. - Achieves all service, financial and Human Resource goals set forth by the VP of Hotel. SUPERVISORY RESPONSIBILITIES: Food Prep, Baker, Lead Baker, Head Baker EDUCATION and/or EXPERIENCE: Required : Associate's degree in Culinary Arts or related field with three years high volume pastry experience. Assistant Pastry Chef experience required. Preferred: Bachelor's degree in culinary arts or related field and six years high volume pastry experience or an equivalent combination of education, training, and experience. KNOWLEDGE/SKILLS/ABILITIES: - Must be able to read, write, and understand English - Math and computer skills; especially Microsoft Word and Excel or similar software. - Must have well rounded working baking and pastry knowledge in all areas. - Must have previous experience in high volume production including large banquets and special functions. - Must excel at recipe development and recipe conversion. PHYSICAL DEMAND: - Constant standing, listening watching and handling. - Constantly staying mentally alert, maintaining eye/hand coordination. - Frequent wrist motion, twisting, bending, reaching, reading, balancing, walking and smelling. - Frequently lifting and carrying up to a maximum of 55 lbs., alone including food products, pots, and pans, for a distance of 450 feet. - Occasional pushing and pulling up to a maximum of 500 pounds. (kitchen carts are utilized to transport as needed) - Occasional stooping. - Occasional tasting WORKING CONDITIONS: - Work is performed indoors in a climate-controlled environment; there are occasional hot and cold temperature changes. - Close spaces while working with others. - Moderate noise levels. - Exposure to food odors. - Stand on tile/mats. HAZARDS : Equipment blades; hot food trays; wet floors; knives WORK SCHEDULE/HOURS: Regular scheduled hours. Must be flexible if needed for occasional work outside of normal business hours.
